Produced from vines planted in Australia's high country this wine is produced with every intention of rivalling those of its Italian origin. Made under the classic Charmat method this expression of Prosecco carries a soft mousse that is incredibly expansive of flavours and softly popping.
This wine is part of the original series of Eddie’s wines which he established in 2007 with his then winemaking partner in crime, Simon Black (Montalto Vineyards, Mornington Peninsula). The focus of this range was to create a unique portfolio of wines from the growing North Eastern wine region of Victoria, Australia. With a clear vision to not make just another bloody Aussie Shiraz, Eddie set his winemaking talents to work on producing classic Italian varietals in the region. In 2011 all wines from this range were rebranded under Eddie McDougall Wines.
Grape Variety: 100% Prosecco
Soil: Clay Loam and granite
Vinification: Whole bunch pressed, fermented with cultured yeast strain QA23, low-temperature fermentation at 12°C. Charmat process occurs for secondary fermentation to achieve approximately 3-3.5 bar of carbonic pressure.

Eddie McDougall Wines was established in 2007 by Eddie McDougall, an enthusiastic entrepreneur, who sought to produce wines outside of the mainstream Australian varietals of Shiraz, Cabernet Sauvignon, and Sauvignon Blanc.
Eddie McDougall Wines released its first vintage in 2007 from grapes grown in Bannockburn, Victoria. Since then, Eddie McDougall and his winemaking team have steadily expanded their portfolio of grape growers allowing them access to some of Australia’s best regions such as Margaret River and the King Valley. With a unique focus of producing both classical and alternative wine styles, the winemaking team is given every opportunity to be creative whilst striving to produce international award-winning wines.

Eddie has worked with the likes of Vietti, Mas de Daumas Gassac, Giant Steps, Deep Woods Estate, O'Leary Walker, Clyde Park, Wood Park, and Silver Heights. In addition, Eddie’s innovative approach to winemaking led him to become the winemaker for Hong Kong’s first urban winery.
Today, Eddie is an award-winning winemaker, chairman of the Asian Wine Review columnist for many international publications, wine judge, a TV personality and founder of The Flying Winemaker, one of Asia-Pacific’s most dynamic wine brands.
When not spending time hanging out with his lovely wife, Freddie and sons, Hugo and Benji, Eddie is madly obsessed with rugby union and spreading the gospel of Rosé Revolution.
